sys-boot/lamboot: correct metadata to GURU maintainer convention

Use the plain <maintainer type=person> greg@lamco.io form the GURU overlay
uses (matching net-misc/lamco-rdp-server); drop the main-tree proxy-maint
structure, which has no role in GURU.
